OATMEAL CRANBERRY COOKIES

1 cup shortening
½ cup sugar
1 cup brown sugar, packed
2 eggs
1 tsp. vanilla
2 cups oats
1½ cups flour
1 tsp. salt
1 tsp. baking powder
¼ tsp. all spice
¼ tsp. cinnamon
½ cup raisins
½ cup cranberries
½ cup chopped walnuts


Mix together shortening and sugars. Add eggs and vanilla. Mix rest of ingredients; adding nuts, raisins, and cranberries into the dough last.

Place 1” balls of dough onto cookie sheet and flatten slightly.

Bake at 375E for about 10-12 minutes or until edges are golden brown. Cool 1-2 minutes on cookie sheet then remove to cool on wire rack.
